This may be one of the best salads I’ve ever made. No lie. It’s so good – and perfect for this time of year. Fresh spinach becomes the base for juicy oranges and crisp fall apples. I added some roasted sweet potato and sliced almonds for some texture.
The dressing is a bit unusual – but perfect for this dish. It would also be great on some grilled chicken or winter squash. I really love how the sweetness of the oranges and honey combines with the smokiness of the cumin and the savory garlic. It’s really different, but really good.
I only made one portion of salad – but thankfully had more than enough dressing to make more!
This is a keeper, and it will definitely be making more appearances in my home!
Fruit and Spinach Salad with Almonds and Orange Vinaigrette
For the salad:
1/2 sweet potato, chopped and roasted
1/2 apple, peeled and sliced
1 orange, cut into segments
1 1/2 cup fresh spinach leaves
2 tablespoons raw sliced almonds
For the dressing:
juice of one large orange
2 tablespoons lemon juice
zest of 1/2 an orange
1 teaspoon cumin
1/2 teaspoon salt
ground pepper to taste
1 clove garlic, finely minced
1/4 teaspoon ground mustard
1 tablespoon honey
1/2 cup – 3/4 cup vegetable oil to taste
Combine salad ingredients in a bowl. Combine dressing ingredients in a mason jar, cover and shake until emulsified into a dressing. Toss a few tablespoons of dressing (to taste) with the salad. Serve and enjoy!
