You might remember my post about making your own Sour Cream Noodles (see here) – this is my take on Rice A Roni, the boxed rice and pasta side dish. The thing I love most about this recipe is it’s versatility – there are so many ways to change-up the flavor!
You can chill this and use it as a base for pasta salad. Simply add shredded chicken, fresh spinach, chopped tomatoes, basil, feta cheese and the juice of a lemon – YUM!! Or for a different flavor – try adding beef stock and sour cream instead of the chicken stock and you have stroganoff flavored rice.
I kept mine simple today and topped it with chopped spinach and tomatoes. I’m serving it with Spice Rubbed Grilled Chicken and fresh corn on the cob. A perfect summer meal!
Homemade Rice A Roni (Chicken)
1 cup rice (I used Jasmine)
1/2 cup chopped dried noodles (fine egg noodles work here too, but I used linguini)
1 tablespoon butter
1 tablespoon olive oil
1 clove garlic, minced
1/2 small onion, diced
2 1/4 cups homemade chicken stock
salt and pepper to taste
In a large saute pan, melt butter and olive oil together. Add onion, garlic, rice and noodles, and cook until the noodles begin to turn golden brown – stirring often. Add in chicken stock and bring to a boil. Turn the heat down to low, cover and cook for 20 minutes. Do not open the lid during this time. Remove from heat and let sit for 5 minutes. Fluff rice with a fork and season to taste with salt and pepper. Enjoy!
The total cost to make this dish is $.28 – much more affordable than the box mix AND so much better for you! Most box mixes are high in sodium – by making your own stock, you can control the amount your family consumes.
