Blackberry Lime Swirl Cake

 

This is a new recipe for me, I tried it out this morning.  I wanted to bake something with blackberries (they were on sale) and lime (because I love anything lime).  Then I realized that Justa’s Kitchen’s Fantastic Food Friday’s Party is tomorrow!  I thought this would be the perfect dish to bring!  It’s a cross between a pound cake and a snack cake.  The lime really comes through – and the blackberries speak for themselves!  I think it turned out great, however the next time I make this, I will add a little more baking powder, because the cake was a little dense.  I would also like to try it with a light icing drizzled over the top.  The flavor of this is incredible, like sunshine on a plate!

 

Blackberry Lime Swirl Snack Cake

6 ounces fresh blackberries

2 tablespoons sugar

2 tablespoons water

1 stick of butter

1 1/4 cups sugar

1/2 teaspoon salt

1/4 teaspoon baking powder

2 eggs

1/2 teaspoon vanilla

grated zest of 1 lime

1/2 cup sour cream

1 1/2 cups all-purpose flour

In a small saucepan, combine blackberries, water and sugar.  Heat until the blackberries start to breakdown, about 3 -4 minutes.  Crush with a potato masher.  Set aside to cool.  In a medium bowl, combine flour, salt and baking powder – set aside.  In a large bowl, cream butter, sugar and lime zest.  Add in eggs, sour cream and vanilla.  Beat well.  Gradually add in flour mixture, beating well after each addition.  Layer half the batter in a greased 9 x 5-inch loaf pan.  Top with half the crushed berries.  Place remaining batter on top and finish with berries.  Using a butter knife, swirl mixture together.  Bake at 350 degrees for about 1 hour – until cake is cooked through and browned.  Let cool completely before slicing.

    • I am definitely trying to incorporate more meatless meals into our diet – the best part is that my kids didn’t notice as much as I thought they would!

  1. This looks extremely good. I have made something similar with lemon but I love lime and look forward to making this. My husband favorite dessert is key lime. I am sure he will enjoy it.
