Lentils With Caramelized Onions, Sweet Potato and Sausage


This is a twist on a recipe I found in the Gourmet Cookbook – Lentils and Curried Rice with Fried Onions.  It’s delicious – I highly recommend you try it out!   Today, however, seemed like the perfect day to experiment with it. I have been craving lentils with sweet potatoes for quite some time.  I decided to add some sausage to create a little more depth to the dish.  You can leave it out if you want – it’s just as good.   This is also very good topped with a fried egg or drizzled with a little yogurt.


Lentils With Carmelized Onions, Sweet Potato and Sausage

2 teaspoons olive oil

1/2 pound bulk sausage (I used a sweet garlic sausage – but any kind is fine)

2 small onions, chopped

2 cloves garlic, minced

1 1/2 teaspoons ground cumin

salt and pepper to taste

1 sweet potato, peeled and diced

1  1/2 cups lentils, rinsed and picked over

1/2 cup jasmine rice

1 cup chicken stock

1 1/2 cups water

1 lemon

1/2 cup chopped parsley (cilantro would be good here also)


In a large stock pot, heat olive oil over medium-high heat.  Add sausage, onions and garlic – cooking until browned and sausage is cooked through.  Add in lentils, rice, sweet potato and spices.  Cook for 2 minutes.  Add in water and chicken stock and bring to a boil.  Drop the heat to low, cover and simmer for 25 minutes until lentils and rice are cooked through.  Add lemon juice and chopped parsley.  Fluff with a fork.  Serve with yogurt on the side.

The total cost on this recipe is $2.35 (without the yogurt) and it serves at least 6 as a main dish – that’s $.39 per serving!  Aside from how frugal this dish is, I also like the fact that I can make this early in the week and have it for lunch (or breakfast).

  1. I’ve got everything on hand so I’m bumping my Meatless Thursday meal and going to try this instead (minus the sausage to keep it meat-free). It’s going to be my first lentil experience and I figure I can’t go wrong with caramelized onions!
