Baked Potato Skins With Sour Cream, Bacon and Cheese

Another Friday night snack! These baked potato skins are easy to prepare and disappear quickly!  I prefer them stuffed with cheddar, bacon and sour cream, but you can use any cheese you like.  These are particularly good with Monterey Jack cheese and topped with homemade salsa.  Another option is to bake them with a little tomato sauce, mozzarella cheese and topped with pepperoni.  Feel free to play around with this one!  Any way you top it – it’s sure to be a crowd pleaser!

Baked Potato Skins With Sour Cream, Bacon and Cheese

8 potatoes, baked

2 tablespoons butter

1 clove garlic, minced

salt and pepper

1 cup shredded cheddar cheese

4 slices bacon, cooked crisp and chopped

sour cream for garnish

Cut each potato in half.  Scoop out potato flesh, leaving 1/2 inch shell.  Place on a baking sheet.  In a small saucepan, melt butter and garlic.  Cook on medium heat until garlic is softened and lightly browned.  Brush garlic butter onto potato skins.  Sprinkle with salt and pepper to taste.  Bake at 450 degrees for about 10 minutes or until crispy and browned to your liking.  Sprinkle with cheese and bacon.  Return to the oven and bake until the cheese is melted and bubbly.  Serve with sour cream.

This recipe serves 4 – 6 people as an appetizer and cost just under $4.00.  They taste amazing – you will definitely be asked to make them again!

    • We eat a lot of popcorn too – In fact, I’ve been fooling around with a recipe to make a cheesy type popcorn….as a bonus, we get to eat even more! 🙂
