Easy Brunch – Ham, Broccoli and Cheese Strata

Ham, Broccoli and Cheese Strata

It’s another cold and rainy day in PA – perfect for serving up something a little more substantial for breakfast. Or brunch…or anytime of the day!  I still had some bread from yesterday’s Four Cheese Spinach Bake and some leftover ham in the freezer – so a strata seemed the perfect way to use it all up! This recipe is perfect because it can be doubled or tripled – you can even bake it in individual ramekins.  It’s another great way to use up leftovers!

Ham, Broccoli and Cheese Strata

1 tablespoons butter

1 cup cooked ham, cubed

1 cup cooked broccoli

1/2 small onion, chopped

1 cup shredded extra sharp cheddar cheese

2 cups bread, cut into 1-inch cubes

3 eggs

1 1/4 cups milk

1/4 teaspoon salt

1/4 teaspoon pepper

pinch of ground mustard

In a small saute pan – melt butter.  Add ham and onion and lightly brown.  Set aside to let cool.  In a medium bowl, beat eggs, milk, salt, pepper and pinch of mustard.  In a buttered 8 x 8-inch baking dish, place half the bread cubes.  Cover with ham, broccoli, onion and 1/2 cup of the cheese.  Place the remaining bread and cheese on top.  Slowly pour the egg and milk mixture over the bread cubes.  Cover and refrigerate for 1 hour (you can let this sit overnight also)  – until the bread soaks up all of the egg mixture.  Bake in a 350 degree oven until puffy, browned and cooked through – about 40 minutes.

I consider this another “free meal” because I had all the ingredients on hand!  You can definitely substitute sausage for the ham – and just about any vegetable for the broccoli.  Other cheeses would work well here – maybe a nice Swiss or Gruyère.  Feel free to experiment!

  1. This looks delicious! My favorite brunch recipes are casseroles like this…I’ll usually do one sweet like a french toast casserole or baked oatmeal, and one savory. Will have to try yours 🙂

    Sorry to hear you’re having rainy, cold weather…we almost got to 100 degrees in Vegas this weekend…extremes of weather!

  2. This isn’t my personal recipe – but French Toast Casserole from the Food Network. Absolutely delicious. And I tweak it by adding vanilla and almond extract to it. I often use semi stale bread or save my bread ends for this recipe. It’s always a crowd-pleaser!

      • I think it’s Paula Deen. I’ve been making it for holiday brunches for awhile now and everyone loves it. Passed it onto my mom and she passed it onto this ladies group she belongs to and they made it for one of their meetings for over 100 people and everyone loved it! it’s such a treat!
