Turkey Taco Lettuce Wraps

 

When the weather gets hot and you don’t want to spend all day standing over the stove, this is the recipe for you! Taco seasoned ground turkey inside cool, crisp lettuce “shells” and topped with whatever vegetables you have on hand – what could be better?!   I used the recipe for taco spice mix from Tsh at SimpleMom.net – and it turned out great!

I topped mine with chopped tomatoes, jalapeno, onion, cilantro, sour cream and cheese – but use whatever you have on hand!  This is more of a method than an actual recipe anyways, so have fun and be creative!

 

Turkey Taco Lettuce Wraps

1/2 head of lettuce (I had iceberg so that’s what I used – but any lettuce is fine)

1 pound ground turkey (or beef, or shredded chicken, or cooked beans…)

taco spice mix (see above link)

1/2 cup water (you might want more if you like a lot of sauce)

assorted vegetables, sour cream and cheese

In a medium skillet, brown meat.  Add seasoning mix and water.  Simmer for 5 minutes to develop the spice flavors.  Assemble a portion of meat inside a leaf of lettuce, add toppings and enjoy!

 

This was a huge hit in my family.  The kids liked that they could decide what vegetables they wanted to use and my husband was pleasantly surprised that he didn’t miss the standard taco shell!  These will have a regular appearance this summer!
